The Campos family has been growing specialty coffee since 2014 from a farm named Finca La Toboba. Their focus on specialty coffee has developed over the years with an investment in equipment and with some real ingenuity in their mechanical processing. Senel Campos retro kitted a depuluper with the motor of a washing machine resulting in a very rewarding 88.75 coffee.
Triple Washed This exclusive lot is 'triple washed'. This means that it undergoes a rigurous processing of washing the coffee three times before it is finally sent to the dry mill where the parchment is removed and the final product is packaged and sent for export.
Yeast Fermentation During the first fermentation, yeast is added to create an enzymatic reaction with the Catuai varietal. This modifies the standard Catuai flavours to create a much more floral and aromatic coffee than the standard representation of the Catuai. This unique combination really highlights some amazing flavours and complexity shown in this coffee.
