A natural hybrid of Red and Yellow Bourbon, it is prized for the striking pink hue of its ripe cherries and a flavour profile that leans sweet, complex, and intensely aromatic. It is challenging to cultivate even in ideal conditions, making each well-executed lot a genuine rarity.\u003c\/p\u003e\n\u003cp\u003eFor this lot, only the ripest cherries were hand-selected and processed at Cofinet's La Pradera facility. Cherries underwent a 72-hour dry anaerobic fermentation with smashed roses added to the oxygen-free environment, allowing their floral aromatics to infuse the coffee at the cellular level.
