Process: Anaerobic Washed
Our recommended filter recipe for this is 15g of coffee to 250g of water. Bloom with 60g. After 30 seconds, pour to 120g. Wait another 15 seconds and pour till 180g and then after 10-15s pour consistently until 250g.
This coffee was grown by Alben Santana at the farm Grano de Oro. This coffee was carefully hand-picked in order to use only the ripest cherries. Later cherries were fermented for 40 hours in an anaerobic environment. Afterward, pulped, gently washed, and sundried until ideal moisture content was achieved. Alben has been transporting coffee and fruits since he was 20 years old. He remains to transport it himself, usually around nearby town and sometimes all the way to Bogota. He inherited his farm from his father 10 years ago. He’s only been producing coffee since 2015. Leonid Ramirez, one of the star producers of Cofinet, has been helping him to improve the quality of his coffees. We’ve been working with Alben since 2018 and we hope to continue working with him.
